Preparation

  1. Nhân Hoành Thánh Thượng Hạng

    • Place all ingredients into a mixing bowl and mix thoroughly.
    • Chill in the refrigerator for at least 2 hours to ensure the seasonings completely dissolve and the filling develops a crisp texture.
    • Portion the filling into 40g/ ball for wrapping.
  2. Gà Quay

    • Clean the chicken, then brine (soak) it overnight to maximize moisture absorption and retention.
    • Roast at 185°C for 12 minutes to achieve a crispy exterior and a tender, juicy interior.
  3. Nước Dùng Gà

    • Bring the water to a rolling boil, add the chicken necks, bring back to a boil, and skim off the scum.
    • Add all remaining ingredients, simmer on low heat for 1 hour, then turn off the heat and let it steep.
    • Afterward, add the seasonings and adjust to taste.
    • To achieve the clearest broth, bring to a gentle simmer to dissolve the seasonings and skim off any remaining impurities.

    • Place the wontons into a bowl, ladle the broth over them, and garnish to complete the dish.
