Quang Noodle Rolls is a fresh take on a traditional dish, featuring chewy turmeric noodles paired with flavorful pork and fresh shrimp, all wrapped neatly in soft rice paper. Preparation

  1. Preparation

    • Dice onion, tomato, pineapple, shallot; bruise garlic chive.
  2. Make the base flavor

    • Sear shrimp quickly in hot oil.
    • Sauté garlic chive, shallot, onion with annatto oil.
    • Add pork belly, stir-fry until fragrant.
    • Add shrimp, stir with seasoning, simmer with a bit of water for a sticky sauce.
    • Remove half of shrimp & pork for rolling later.
      Sauté tomato & pineapple with oil, add to remaining shrimp & pork in pot.
    • Add crab paste, stir-fry for fragrance, pour remaining water, boil, season to taste.
    • Blend and strain to get smooth noodle sauce.
  3. Special flavor

    • Peel sautéed shrimp, slice pork belly, roll with fresh noodles, herbs, chili & lime.
  4. Seasoning and food display

    • Seasoning the dish
    • Arrange nicely, serve with rice crackers or garlic bread
