Preparation

  1. Salmon Gravlax

    • Blend beetroot until smooth.
    • Mix with sugar, salt, coriander seeds, pepper, orange zest, and lime powder.
    • Rub mixture onto the salmon and refrigerate overnight.
  2. Vegetable salad

    • Julienne all vegetables and soak them in ice water for extra crunch.
    • Deep-fry taro until golden and crispy.
  3. Dressing

    • In a blender, combine sugar, fish sauce, chili sauce, red chili, and lime powder.
    • Blend until smooth, then strain to get a fine sauce.
  4. Plate & Serve

    • Slice cured salmon thinly and arrange like a flower in the center of the plate.
    • Place salad around it. Drizzle with sauce or serve on the side for diners to mix themselves.
